Dinner: Avocado Tomato Grilled Cheese

B and I love simple meals. We are low maintenance when it comes to food prep and meal difficulty. Most of the time for lunches and dinners, you’ll see us eating sandwiches, tacos, mac and cheese, hot dogs, soup, or spaghetti. Simple, flavorful meals.

This night, he wanted grilled cheese and I wanted to use the avocado in our fridge. Grilled cheese can be dressed up so many ways. One of my favorite sandwich recipe sites features countless ideas to reinvent the grilled cheese sandwich.

Please disregard the plasticy cheese in the lower left corner. Resolve: I need better cheese on hand. However, plastic cheese seems to last forever.
1) Slice

4) Cut and serve

  • Sliced Bread
  • Tomatoes
  • Avocado
  • Cheese
  • Mayo (optional)
  • Salt and Pepper
  • Olive Oil


  • Turn on Panini press. If you don’t have one just use a regular fry pan.
  • Peel and slice avocado and tomato
  • Brush two slices of bread on one side with olive oil
  • Spread mayo the other side of one of the pieces of bread and layer cheese, avocado, and tomato on top.
  • Sprinkle with salt and pepper and lay the second piece of bread on top (olive oil side out).
  • Cook in panini press or pan
  • Slice in half and serve!

I served these sandwiches along side raw carrots and tortilla chips and guacamole. I would also recommend a fresh green or fruit salad.
