Dinner: Grilled Burritos

This meal is a combination of something I glanced at on Pinterest, our love of anything Mexican and our beloved panini maker. It’s super easy because its part crockpot and the rest of it can be made in 20 minutes after work.

Step 1: Put chicken breasts (frozen or not) in the bottom of the crock pot. Spoon several tablespoons of taco seasoning on the chicken. Cover with salsa

IMG_6080Part 3: Put the lid back on the crock pot until the rest of the ingredients are done. Start the rice and make the fresh salsa.

IMG_8611Step 4: When the rice is done, add a can of corn and a couple squirts of lime juice to it.

IMG_3512Step 5: Heat tortillas and layer in chicken.

IMG_5524Step 6: Layer rice, salsa and some cheese. Shredded cheddar or I had queso on hand that was very tasty.

IMG_1418Step 7: Fold sides of tortilla and place in panini maker.

IMG_8495It turned out super tasty and crunchy! B loved them and I did too. Definitely a keeper.

Burrito Paninis


  • 2 chicken breasts
  • 1 can of salsa
  • 3-4 tbsp Taco seasoning
  • 1 Tomato
  • 2-3 Scallions
  • 1/2 yello onion
  • 3 tbsp Lime juice
  • Rice
  • Corn
  • Cheese (queso or shredded cheddar)
  • Salt and Pepper to taste


  1. Layer, chicken, taco seasoning and salsa in crockpot and set to HIGH for 4-5 hours or LOW for 6-8 hours.
  2. After 4-5 hour or 6-8 hours, cook rice and shred chicken
  3. Make fresh salsa from tomatoes, scallions, onion, 2 tbsp lime juice and salt and pepper.
  4. Add corn and 1 tbsp lime juice to rice
  5. Layer chicken, rice, fresh salsa, and cheese of your choice on a warmed tortilla.
  6. Fold tortilla and place in panini maker.
  7. Serve with salad or Doritos!
