Dinner: Tacos with fresh salsa

Yesterday, our car was in the shop so I came up with a plan to make dinner with only what I had on hand. This is normal, but with working at the summit these past few days, I haven’t had time to think about it before getting home after 5.

B loves tacos and I love to make them for him. Almost every time we visit his family’s house, his father makes amazing tacos. The secret is a great fresh salsa that makes the whole room smell like green onions and lime juice. So tantalizing. 🙂

Sautéed the beef.


Add taco seasoning.


Make salsa. (recipe below)


Chop lettuce, shred cheese and heat soft tortillas.


Layer all together and serve with Doritos or rice.



Salsa recipe

– 1/2 red onion
– 1 vine tomato
– 2-3 scallions
– 1 lime juiced or 2 tbsps bottled lime juice
– 2 cloves of garlic minced
– salt and pepper to taste

– Dice tomato, onion, scallions
– Add garlic and lime juice
– Sprinkle salt and pepper to taste
– Add to tacos!

Such a good refreshing meal and it only took about 30 minutes to prepare. This makes a great week night meal!
